Ingredients

[Rice]

  • 2 cups Royal Umbrella Fragrant Rice
  • 1½ cup water
  • ½ cup yogurt
  • 2 tbsp cumin powder
  • 1 tbsp cinnamon powder
  • ½ tsp clove powder
  • ½ tsp cardamom powder
  • ½ tsp mace powder
  • 3 tbsp ghee or melted butter
  • ½ tsp salt

[Chicken marinade]

  • 1 chicken thigh or breast, cut into 3 pieces
  • 2 tbsp cumin powder
  • 1 tbsp cinnamon powder
  • ½ tsp clove powder
  • ½ tsp cardamom powder
  • ½ tsp mace powder
  • 3 tbsp ghee or melted butter
  • ½ tsp salt
  • 5 tbsp melted butter or ghee
  • Pinch of salt

 

Directions

  1. In a rice cooker, add in the rice, water, yoghurt, cumin powder, cinnamon powder, clove powder, cardamom powder, mace powder, ghee or melted butter and salt.

  2. Leave to cook and fluff it with a spatula when cooked.

  3. To make the chicken marinade, mix all the ingredients for the marinade together and brush it on the chicken

  4. Leave the marinated meat for 15 minutes and deep fry it.

  5. Serve with Curried Rice.
